Spicy Shrimp Power Salad π₯π₯

π Ingredients:
For the Salad:
2 cups mixed greens (spinach, kale, or arugula)
Β½ cup cucumber, sliced
Β½ cup cherry tomatoes, halved
ΒΌ cup carrots, sliced
Β½ cup broccoli florets
Β½ yellow bell pepper, sliced
ΒΌ cup fresh blueberries
For the Spicy Shrimp:
8-10 medium shrimp, peeled and deveined
1 tsp olive oil
Β½ tsp paprika
Β½ tsp chili powder
ΒΌ tsp garlic powder
ΒΌ tsp salt
ΒΌ tsp black pepper
For the Dressing:
2 tbsp tahini
1 tbsp lemon juice
1 tsp honey or maple syrup
Β½ tsp Dijon mustard
1 tbsp water (to thin)
Salt & black pepper to taste

1οΈβ£ Prepare the Shrimp:
In a bowl, toss shrimp with olive oil, paprika, chili powder, garlic powder, salt, and black pepper.
Heat a pan over medium-high heat and cook shrimp for 2-3 minutes per side until opaque and slightly crispy.
2οΈβ£ Make the Dressing:
In a small bowl, whisk together tahini, lemon juice, honey, Dijon mustard, and water until smooth.
Season with salt and black pepper to taste.
3οΈβ£ Assemble the Salad:
In a large bowl, arrange the mixed greens as the base.
Add cucumbers, cherry tomatoes, carrots, broccoli, bell peppers, and blueberries.
4οΈβ£ Add the Shrimp:
Place the cooked shrimp on top of the salad.
