Avocado Egg Salad Bowl 🥑🥗
Ingredients:
1 ripe avocado, sliced
2 boiled eggs, halved
A handful of spinach or arugula
1/2 cup cherry tomatoes, halved
1/4 cup feta cheese, cubed or crumbled
Salt and black pepper to taste
Olive oil
Lemon juice
Instructions:
Start by boiling the eggs for about 10 minutes, then peel and cut them in half.
In a serving bowl, place the spinach or arugula as the base.
Arrange the avocado slices, cherry tomatoes, boiled eggs, and feta cheese on top.
Season with salt and black pepper, then drizzle with olive oil and a bit of lemon juice.
