Herby Lemon Dijon Egg Salad platter for dinner today, with cucumber π₯, carrot π₯, cherry tomatoes π
, kalamata olives, half an avocado π₯ with hemp hearts and green leaf lettuce π₯¬ all drizzled with Lemon Turmeric dressing! Iβve made quite a few different versions of egg salad in my time but this one is definitely a favorite! Hereβs how I made it:
Roughly chop 2 hard boiled eggs and add to a bowl along with 1 teaspoon of good mayo, 1/2 teaspoon Dijon mustard, 1 tablespoon fresh lemon juice, 1 tablespoon fresh chopped chives, 1 tablespoon fresh chopped dill, 1 teaspoon capers and 1/2 teaspoon cracked black pepper then mix all ingredients together. Feel free to sub the mayo for plain Greek yogurt but if you do then season with salt to taste. This recipe makes 1-2 servings so double and triple up the ingredients for larger batches. It was a nourishing and delicious dinner.
