Steak and Shrimp Scampi with Garlic Butter 🍤🥩
Ingredients:
- 1 lb. jumbo shrimp, peeled and deveined
- 1 lb. NY Strip Steak
- 2 tbsp unsalted butter
- 2 tbsp olive oil
- 1 tbsp minced garlic, divided
- 2 tbsp lemon juice
- 1 tsp coarse salt
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 3 tbsp finely chopped parsley, plus more for garnish
- 1 cup chicken broth or vegetable broth
- 1 lb. linguine
Instructions:
1. Begin by cooking the linguine in a large pot of salted boiling water until it reaches an al dente texture, about 7 minutes. Drain well and set aside.
2. In a large skillet over medium heat, combine the butter and olive oil. Once melted, add the minced garlic and red pepper flakes, sautéing for about one minute until fragrant.
3. Add the peeled and deveined jumbo shrimp to the skillet, seasoning with salt and pepper. Cook them until they turn pink, approximately 5 minutes. Once cooked, remove the shrimp from the skillet and set aside.
4. In the same skillet, pour in the chicken or vegetable broth along with the lemon juice. Cook for another minute to allow the flavors to meld. Remove the skillet from heat and stir in the chopped parsley.
5. Toss the cooked linguine and shrimp back into the skillet, ensuring everything is well-coated with the delicious sauce.
6. While the pasta is being prepared, heat a large cast iron pan over high heat. Season the NY Strip Steak generously with coarse salt and black pepper. Lightly brush the steak with oil, then cook for about 4-5 minutes on each side for medium-rare (135°F) or until desired doneness is reached.
7. After cooking, mix the remaining unsalted butter with the minced garlic. Top the cooked steak with this garlic butter before slicing it against the grain into thick strips.
8. To serve, divide the linguine and shrimp mixture between two plates. Top each plate with slices of steak and garnish with extra parsley.
