Southern Homefried Potatoes and Onions
3 tablespoons vegetable oil, canola oil, olive oil 3 medium russet potatoes - peeled and sliced in rounds
large vidalia onion - sliced
2 tablespoons onion powder
1/2 teaspoon salt, dash or 2 of black pepper
1/2 teaspoon paprika
Heat the oil in a large skillet set over medium meat. Once the oil is hot, place in the sliced potatoes, sliced onion, and seasonings, flip potatoes (do not stir)
well to combine.
Cook for 15-20 minutes, flipping the potatoes every 5 minutes or so to ensure even cooking. Avoid over flipping, as this will result in mushy potatoes.
Once the potatoes are golden and the onions are soft and slightly charred, serve immediately garnished with fresh parsley, if desired.
