Pear & Berry Salad with Goat Cheese & Walnuts
**Ingredients:
- 6 cups Mixed Salad Greens
- 3 Organic Pears (sliced)
- ½ cup Blueberries
- ½ cup Pomegranate Seeds
- 1 Shallot (finely chopped)
- 1 clove Garlic (minced)
- ½ cup Walnuts (toasted & chopped)
- 2 tbsp Sunflower Seeds
- ½ cup Goat Cheese (crumbled)
**Dressing:
- 1 tbsp Dijon Mustard
- 1 tsp Honey
- 1 squeeze Lemon Juice
- 2 tbsp Apple Cider Vinegar
- ¼ cup Extra-Virgin Olive Oil
- ¼ tsp Freshly Ground Black Pepper
- ½ tsp Himalayan Pink Salt
**Instructions:
1. Prepare Ingredients: Slice pears, chop shallot, and mince garlic.
2. Make Dressing: Whisk together Dijon mustard, honey, lemon juice, apple cider vinegar, olive oil, salt, and pepper.
3. Assemble Salad: Toss greens, pears, blueberries, pomegranate seeds, shallot, walnuts, and sunflower seeds.
