Cajun Chicken and Broccoli Alfredo 🍝🌶🥦✨
A creamy, spicy, and satisfying dinner that’s packed with bold flavors!
Ingredients:
2 boneless, skinless chicken breasts, sliced into strips
1 tbsp Cajun seasoning
½ tsp salt
1 tbsp olive oil
12 oz fettuccine or penne pasta
2 cups broccoli florets
Salt (for pasta water)
2 tbsp butter
2 cloves garlic, minced
1 tsp Cajun seasoning (adjust to taste)
1 ½ cups heavy cream or half-and-half
1 cup grated Parmesan cheese
Juice of ½ lemon (optional)
Salt & pepper to taste
Chopped green onions (optional for garnish)
Fresh parsley (optional for garnish)
Extra Parmesan (optional for garnish)
Instructions:
1️⃣ Cook the Pasta & Broccoli – Boil pasta in salted water according to package directions. In the last 2-3 minutes, add broccoli to the pot. Drain and reserve ½ cup of pasta water.
2️⃣ Prepare the Chicken – Season chicken strips with Cajun seasoning and salt. Heat olive oil in a skillet over medium-high heat, then cook chicken for 4-5 minutes per side until golden and fully cooked. Remove and set aside.
3️⃣ Make the Sauce – In the same skillet, melt butter over medium heat. Sauté garlic for about 1 minute until fragrant. Stir in Cajun seasoning and add heavy cream, letting it simmer for 3-4 minutes until slightly thickened.
4️⃣ Whisk in Parmesan – Stir in grated Parmesan until smooth. If using, add lemon juice for brightness.
5️⃣ Combine Everything – Add cooked pasta, broccoli, and chicken to the sauce, tossing to coat. If needed, use reserved pasta water to reach desired consistency.
6️⃣ Serve & Garnish – Plate your Cajun Alfredo and top with green onions, parsley, and extra Parmesan.
