Cajun Shrimp Fettuccine with Creamy Garlic Sauce
Spicy Cajun Shrimp Fettuccine in a Lusciously Creamy Sauce
Ingredients:
12 oz fettuccine pasta
1 lb large shrimp, peeled and deveined
2 tablespoons olive oil
1 tablespoon Cajun seasoning
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tablespoon butter
1 teaspoon paprika
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon red pepper flakes (optional)
2 tablespoons chopped fresh parsley
Lemon wedges for serving
Directions:
Cook the fettuccine pasta according to package directions. Drain and set aside, reserving 1/2 cup of pasta water.
In a large bowl, toss the shrimp with Cajun seasoning until evenly coated.
Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2 minutes per side until pink and cooked through. Remove shrimp and set aside.
In the same skillet, melt the butter. Add minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream and chicken broth. Stir well, scraping up any bits from the bottom of the pan.
Stir in Parmesan cheese, paprika, black pepper, salt, and red pepper flakes. Simmer gently for 3-4 minutes until the sauce thickens.
Add the cooked pasta to the skillet, tossing to coat in the sauce. Add reserved pasta water as needed to thin out the sauce.
Return the shrimp to the skillet and toss everything together until heated through.
Garnish with chopped parsley and serve with lemon wedges on the side.
