Garlic Herb Salmon with Mushroom Pasta
Seared Garlic Herb Salmon over Creamy Mushroom Pasta Delight
Ingredients:
2 salmon fillets
200g (7 oz) pasta (fettuccine or linguine recommended)
2 tablespoons olive oil
3 cloves garlic, minced
200g (7 oz) cremini or button mushrooms, sliced
1/2 cup vegetable broth
1/2 cup heavy cream
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon thyme
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon wedges, for serving
Directions:
Cook pasta according to package instructions until al dente. Drain and set aside.
Season salmon fillets with salt, pepper, basil, oregano, and thyme.
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add salmon fillets, skin-side down, and cook for 4-5 minutes per side or until golden and cooked through. Remove from skillet and set aside.
In the same skillet, add the remaining olive oil. Sauté garlic for about 30 seconds until fragrant.
Add sliced mushrooms and cook for 4-5 minutes until tender and golden.
Pour in the vegetable broth and let simmer for 2-3 minutes, scraping any browned bits from the bottom of the pan.
Stir in the heavy cream and cook for another 2-3 minutes until slightly thickened.
Add the cooked pasta into the mushroom sauce, tossing well to coat.
Place salmon fillets atop the pasta. Garnish with fresh parsley and serve with lemon wedges.
