Balsamic Glazed Roasted Carrots 🥕✨

📋 Ingredients
- 1 lb carrots, peeled and cut into sticks or left whole if thin
- 1 1/2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon fresh thyme leaves (optional)
📝 Instructions
1. Preheat your oven to 400°F (200°C).
2. Line a baking sheet with parchment paper.
3. In a large bowl, toss carrots with olive oil, salt, and pepper.
4. Spread them out evenly on the prepared baking sheet.
5. Roast for 20–25 minutes, turning halfway, until tender and slightly caramelized.
6. While the carrots roast, mix balsamic vinegar and honey in a small bowl.
7. In the last 5 minutes of roasting, drizzle the balsamic mixture over the carrots and toss to coat.
8. Return to the oven until glossy and sticky.
9. Sprinkle with fresh thyme if desired and serve warm.
