Delicious Peach Fritters
Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 large eggs
3/4 cup whole milk
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 1/2 cups diced fresh peaches (or well-drained canned peaches)
Vegetable oil, for frying
Glaze:
1 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Directions:
In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, beat eggs, then add milk, melted butter, and vanilla.
Combine the wet and dry ingredients and stir until just mixed.
Fold in diced peaches gently.
In a deep skillet or pot, heat oil to 350°F (175°C).
Drop batter by heaping tablespoons into the hot oil, a few at a time.
Fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
In a small bowl, mix powdered sugar, milk, and vanilla until smooth to make the glaze.
While fritters are warm, drizzle with glaze or dip them in fully for extra sweetness.
