Cilantro Lime Chicken with Avocado Penne
Zesty Cilantro Lime Chicken Tossed with Creamy Avocado Penne
Ingredients:
2 boneless, skinless chicken breasts, diced
2 tablespoons olive oil
2 cloves garlic, minced
Juice and zest of 2 limes
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper to taste
1/2 cup chopped fresh cilantro
1 ripe avocado, diced
1/4 cup plain Greek yogurt
2 tablespoons lime juice (for sauce)
8 oz penne pasta
1/4 cup grated Parmesan cheese (optional)
1/4 cup finely chopped red onion (optional)
Directions:
Cook the penne pasta according to package directions. Drain and set aside.
In a bowl, mix diced chicken with olive oil, minced garlic, lime juice and zest, cumin, chili powder, salt, and pepper. Let it marinate for 15 minutes.
Heat a nonstick skillet over medium heat. Add marinated chicken and cook for 6-8 minutes, or until golden and cooked through.
In a separate bowl, mash half the avocado with Greek yogurt and 2 tablespoons of lime juice until creamy. Add salt to taste.
In a large mixing bowl, toss the cooked penne with the creamy avocado sauce, cooked chicken, remaining avocado chunks, chopped cilantro, and red onion if using.
Top with grated Parmesan cheese (optional) and serve warm or chilled.
