Steak Bites with Mashed Potatoes and Gravy
Ingredients (Serves 4)For the Steak Bites:
1.5 lbs (680g) sirloin steak, cut into 1-inch cubes
1 tbsp olive oil
1 tsp salt
1 tsp black pepper
1 tsp garlic powder
1 tsp smoked paprika
For the Gravy:
2 tbsp unsalted butter
2 tbsp all-purpose flour
1.5 cups beef broth
1 tsp Worcestershire sauce
1/2 tsp onion powder
Salt and pepper to taste
For the Mashed Potatoes:
2 lbs (900g) Yukon Gold potatoes, peeled and cubed
1/2 cup heavy cream
1/4 cup unsalted butter
1 tsp salt
1/2 tsp black pepper
2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Mashed Potatoes:Place the cubed potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook for 15-20 minutes until fork-tender.
Drain the potatoes and return them to the pot. Add heavy cream, butter, salt, and pepper. Mash until smooth and creamy. Cover and keep warm.
2. Cook the Steak Bites:Pat the steak cubes dry with paper towels. Season with salt, black pepper, garlic powder, and smoked paprika.
Heat olive oil in a large cast-iron skillet over medium-high heat. Add the steak cubes in a single layer (work in batches if needed to avoid overcrowding).
Sear for 2-3 minutes per side until browned and cooked to your desired doneness (135°F/57°C for medium-rare). Remove the steak from the skillet and set aside.
3. Make the Gravy:In the same skillet, reduce the heat to medium. Add the butter and let it melt.
Whisk in the flour and cook for 1-2 minutes to form a roux, stirring constantly.
Gradually pour in the beef broth while whisking to avoid lumps. Add Worcestershire sauce and onion powder.
Simmer for 3-5 minutes, stirring occasionally, until the gravy thickens. Season with salt and pepper to taste.
Return the steak bites to the skillet, tossing them in the gravy to coat. Cook for 1-2 minutes to heat through.
4. Serve:Spread a generous layer of mashed potatoes in the skillet or on a serving platter.
Top with the steak bites and pour the gravy over everything.
Garnish with chopped parsley and serve immediately.
NotesFor extra flavor, add a splash of red wine to the gravy while simmering.
You can substitute Yukon Gold potatoes with russet potatoes if preferred.
