2 boneless, skinless chicken breasts, sliced
2 tbsp olive oil
3 cloves garlic, minced ๐ง
1 tbsp lemon juice ๐
1 tbsp fresh oregano, chopped ๐ฟ
ยฝ tsp red pepper flakes (adjust to your spice preference)
Salt & freshly cracked black pepper to taste

2 medium Yukon Gold potatoes, cut into ยฝ-inch cubes
1 tbsp olive oil
3 cloves garlic, minced
1 tsp fresh rosemary, chopped ๐ฟ
ยฝ tsp dried oregano
Salt & freshly cracked black pepper to taste

4 oz cremini mushrooms, finely chopped
2 tbsp olive oil
2 cloves garlic, minced
ยผ cup fresh basil leaves ๐ฟ
2 tbsp grated Parmesan cheese ๐ง
2 tbsp heavy cream
ยผ cup crumbled feta cheese
1-2 tsp hot sauce (adjust to your spice preference)
1 tbsp lemon juice ๐
Salt & freshly cracked black pepper to taste

Instructions
1. Marinate & Cook the Chicken
In a bowl, toss chicken slices with olive oil, minced garlic, lemon juice, oregano, red pepper flakes, salt, and pepper.
Heat a grill pan or skillet over medium-high heat. Grill or sautรฉ chicken for 2-3 minutes per side, or until cooked through and lightly browned. Set aside.
2. Prepare the Roasted Garlic-Herb Potatoes
Preheat oven to 425ยฐF (220ยฐC).
In a bowl, toss potato cubes with olive oil, minced garlic, rosemary, oregano, salt, and pepper.
Spread potatoes in a single layer on a baking sheet and roast for 20โ25 minutes, or until golden brown and tender, flipping halfway through.
3. Prepare the Creamy Mushroom-Garlic Basil Pesto with Spicy Whipped Feta
Heat olive oil in a skillet over medium heat. Add chopped mushrooms and minced garlic. Cook until mushrooms are softened and have released their liquid, about 5-7 minutes.
Transfer the cooked mushroom mixture to a food processor or blender. Add basil leaves, Parmesan cheese, heavy cream, crumbled feta cheese, hot sauce, and lemon juice.
Blend until smooth and creamy. Season with salt and pepper to taste.
4. Assemble & Serve
Arrange the roasted garlic-herb potatoes on plates or in a bowl.
Top with the Greek-marinated spicy garlic chicken slices.
Drizzle generously with the creamy mushroom-garlic basil pesto infused with spicy whipped feta.
