• 1 cup cucumber, diced

• ½ cup tahini 🥜
• Juice and zest of 1 lemon 🍋
• 1 garlic clove, minced 🧄
• 2 tbsp fresh dill, chopped 🌿
Salt & pepper, to taste
Water (to thin sauce as desired)

Instructions:

Toss chickpeas, zucchini, and cherry tomatoes with olive oil, paprika, garlic powder, salt & pepper. Roast at 400°F for 20 mins until crispy and golden.
2. 🍝 Cook Chickpea Pasta:
Prepare chickpea pasta according to package instructions. Drain and set aside.

Whisk tahini, lemon juice, zest, garlic, dill, salt, pepper, and water until creamy and smooth.
