Blueberry Cottage Cheese Breakfast Bake
Deliciously Creamy Blueberry Cottage Cheese Bake for a Wholesome Start
Ingredients:
2 cups cottage cheese
1 cup rolled oats
1 cup fresh blueberries (or frozen, thawed)
1/4 cup honey or maple syrup
2 large eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup almond milk (or any milk of choice)
1/4 cup chopped nuts (optional, for topping)
Directions:
Preheat the oven to 350°F (175°C).
In a large mixing bowl, combine the cottage cheese, rolled oats, honey (or maple syrup), eggs, vanilla extract, baking powder, cinnamon, and salt. Mix well until all ingredients are thoroughly combined.
Gently fold in the fresh blueberries, being careful not to crush them.
Pour the mixture into a greased 9x9-inch baking dish, spreading it evenly.
If desired, sprinkle chopped nuts on top for added crunch.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the center is set.
Allow to cool for a few minutes before slicing into squares. Serve warm or at room temperature.
