Tuna Avocado Macaroni Salad 🥑

Ingredients:

2 cups elbow macaroni, uncooked

1 ripe avocado, diced

1 can (5 oz) tuna in water, drained

½ cup mayonnaise

1 tbsp lemon juice

½ cup celery, chopped

¼ cup red onion, finely chopped

Salt and black pepper to taste

Optional: fresh parsley for garnish

Directions:

Cook macaroni according to package directions. Drain and rinse under cold water to cool.

In a large bowl, add the cooked macaroni, drained tuna, diced avocado, celery, and red onion.

In a small bowl, mix the mayonnaise with lemon juice. Stir well.

Pour the mayo dressing over the salad ingredients. Gently toss everything together until well coated.

Season with salt and pepper to taste.

Chill in the fridge for about 30 minutes before serving for best flavor.

Garnish with fresh parsley if you like, and serve cold.
