🍬 Homemade Gumdrop Candy 🍭
Ingredients
1 cup water, divided
5 packets (1 1/4 oz) unflavored gelatin
1 3/4 cups granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1 teaspoon flavored extract (e.g., lemon, orange, or cherry)
Food coloring (optional, as desired)
Extra granulated sugar, for coating
Instructions
Bloom the Gelatin: In a large mixing bowl, pour 1/2 cup of water. Sprinkle the gelatin evenly over the water and let it sit for 5 minutes to bloom. It will absorb the water and become spongy.
Prepare the Sugar Syrup: In a medium saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Stir over medium heat until the sugar dissolves completely.
Cook the Syrup: Increase the heat to medium-high and bring the mixture to a boil. Avoid stirring once it starts boiling. Use a candy thermometer to monitor the temperature, cooking until it reaches 240°F (115°C). This is the soft-ball stage, which ensures the perfect chewy texture.
Combine Gelatin and Syrup: Carefully pour the hot sugar syrup into the bloomed gelatin while whisking continuously. Keep whisking until the gelatin is fully dissolved and the mixture is smooth.
Add Flavor and Color: Stir in your chosen flavored extract (e.g., lemon, orange, or cherry) and a few drops of food coloring. Mix well until the color is evenly distributed.
Set the Gumdrops: Lightly grease an 8×8-inch baking dish or silicone molds with non-stick spray. Pour the gumdrop mixture into the dish or molds. Let it sit at room temperature for 4-6 hours, or until firm and set.
Cut and Shape: If using a baking dish, loosen the edges with a knife and invert the gumdrop slab onto a cutting board. Cut into small cubes or use cookie cutters for fun shapes.
Coat with Sugar: Roll each gumdrop in granulated sugar to prevent sticking and add a sweet finish.
Store and Enjoy: Serve immediately or store in an airtight container at room temperature for up to 1 week.
