Cheesy Mashed Potato Puffs 🧀🥔
Ingredients:
2 cups mashed potatoes (leftover or freshly made)
3 large eggs, beaten
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup minced fresh chives
1/4 cup diced cooked bacon or ham (optional)
Salt and freshly ground black pepper, to taste
Sour cream, for serving (optional)
Instructions:
Preheat the oven to 400°F (200°C). Lightly grease the cups of a mini muffin tin.
In a large bowl, combine the mashed potatoes, beaten eggs, 3/4 cup of the cheddar cheese, Parmesan cheese, chives, and bacon or ham if using. Season with salt and pepper to taste.
Spoon the potato mixture into the prepared muffin cups, filling each to the top. Sprinkle the remaining 1/4 cup of cheddar cheese over the tops.
Bake for 20 minutes, or until the potato puffs are set and golden brown on top.
