🥄 1/2 cup coconut yogurt
🥄 1/3 cup maple syrup
For the Frosting:
🥄 1 cup soaked cashews
🥄 1/4 cup milk of choice
🥄 3-4 tbsp maple syrup
🥄 2 tsp beetroot powder (for color)
🥄 1/2 tsp vanilla extract
🥄 1/4-1/2 tsp rose water
To Decorate:
🎨 Chopped pistachios

Instructions:
1️⃣ Preheat oven to 350°F (180°C) & line loaf pan with parchment paper.
2️⃣ Mix ground pistachios, oat flour, gluten-free flour, baking powder, salt, & cardamom.
3️⃣ Stir in coconut yogurt & maple syrup, pour into loaf pan & bake for 25-30 mins.
4️⃣ Cool loaf, then prepare frosting by blending soaked cashews, milk, maple syrup, beetroot powder, vanilla extract, & rose water until smooth.
5️⃣ Spread frosting over cooled loaf, garnish with pistachios & pomegranate seeds.
