Banana Bread Cinnamon Rolls
Ingredients:
- Dough:
- 1 cup mashed banana (about 2-3 medium bananas)
- 4 cups all-purpose flour
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup melted unsalted butter
- 1/2 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1 cup warm milk
- Filling:
- 1/2 cup chopped walnuts (optional)
- 2 tablespoons ground cinnamon
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- Icing:
- 1/2 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 1/4 cup unsalted butter, softened
- 4 oz cream cheese, room temperature
Directions:
1. In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
2. In a large mixing bowl, combine the mashed bananas, melted butter, sugar, eggs, and salt. Mix well.
3. Add the yeast mixture to the banana mixture and stir to combine.
4. Gradually add the flour, mixing until a soft dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
5. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 1 1/2 hours, or until doubled in size.
6. Meanwhile, prepare the filling by mixing together the softened butter, brown sugar, cinnamon, and chopped walnuts.
7. Once the dough has risen, punch it down and roll it out into a large rectangle (about 16x12 inches).
8. Spread the filling evenly over the dough.
9. Starting from one of the long edges, tightly roll the dough into a log.
10. Cut the log into 12 equal slices and place them in a greased baking dish, leaving a little space between rolls.
11. Cover the rolls and let them rise for another 30 minutes.
12. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.
13. While the rolls bake, prepare the icing by beating together the cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
14. Allow the rolls to cool slightly before spreading the icing generously on top.

Tips:
