🇮🇹 Caponata Siciliana (Sicilian Eggplant Relish)
Sweet, tangy, and savory – a true Mediterranean vegetable medley.
Ingredients
Eggplant: 2 medium, cubed
Tomatoes: 1 cup (200 g), chopped
Capers: 2 tbsp
Onion: 1, diced
Celery: 1 stalk, chopped
Vinegar: 2 tbsp
Sugar: 1 tbsp
Olive oil: for frying
Salt: to taste
Instructions
1️⃣ Fry eggplant in olive oil until browned, then drain on paper towels.
2️⃣ Sauté onion and celery in a pan until softened.
3️⃣ Stir in tomatoes, vinegar, and sugar. Simmer for 10 minutes.
4️⃣ Add capers and cooked eggplant.
5️⃣ Mix and simmer for another 10 minutes.
6️⃣ Let cool slightly and serve warm or cold with bread.
