• 1/2 cup (120 ml) milk
Instructions:
1 Preheat oven to 175°C (350°F). Grease and flour a 9x5 inch loaf pan.
2 In a large bowl, cream the butter and sugar together until light and fluffy (about 3-4 minutes).
3 Add eggs one at a time, beating well after each addition.
4 Stir in lemon zest and lemon juice.
5 In a separate bowl, whisk together flour, baking powder, and salt.
6 Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
7 Pour the batter into the prepared pan and smooth the top.
8 Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
9 Let cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
