No-Bake Sugar Free Lemon Pie
Ingredients:
- 8 oz cream cheese
- 2 cups heavy whipping cream
- 1 package sugar free lemon pudding mix
- 1/2 cup lemon juice
- 1/2 teaspoon vanilla extract
- 1 pecan pie crust (sugar free if desired)
- Whipped topping for garnish
Directions:
1. Melt the cream cheese until smooth and creamy.
2. In a large bowl, combine the melted cream cheese, heavy whipping cream, and sugar free lemon pudding mix. Mix thoroughly until well blended.
3. Add the lemon juice and vanilla extract to the mixture and stir until fully incorporated.
4. Pour the lemon mixture into the pecan pie crust, spreading evenly.
5. Refrigerate the pie for 30 minutes to allow it to set.
6. Before serving, add whipped topping on the pie as a garnish.
