Cinnamon Roll Apple Pie Cups
Ingredients:
- 1 can refrigerated cinnamon roll dough (8 rolls)
- 2 medium apples, peeled, cored, and diced
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, melted
- 1/2 teaspoon vanilla extract
- Optional: powdered sugar for dusting
Directions:
1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
2. Open the cinnamon roll dough and separate the rolls. Using your hands or a rolling pin, flatten each roll slightly.
3. Place each flattened cinnamon roll into a muffin cup, pressing gently to form a cup shape.
4. In a medium bowl, combine diced apples, sugar, cinnamon, nutmeg, lemon juice, melted butter, and vanilla extract. Stir until apples are well coated.
5. Spoon the apple mixture evenly into each cinnamon roll cup.
6. Bake for 18-22 minutes, or until the cinnamon rolls are golden brown and the apples are tender.
7. Remove from oven and allow to cool slightly before removing from the muffin tin.
8. Optional: dust with powdered sugar before serving.
