Decadent Apple Crumb Cake 🍰🍎

1 cup granulated sugar 🍬

1/4 cup cream cheese, room temperature 🍰
1 tbsp unsalted butter 🧈
1/4 cup powdered sugar 🍚

1-3 tbsp apple cider 🍏

Directions:

1. Start by making the Streusel Crumb. In a bowl, mix together the flour, granulated sugar, brown sugar, cinnamon, and nutmeg. Cut the butter into small cubes and mix it in with a fork until it becomes crumbly. Pop it in the fridge while you prepare the batter.

2. Next, it’s time to prepare the apples. Peel and chop them into 3/8-inch pieces, then toss them with cinnamon and nutmeg. Set these aside for later.

3. Preheat your oven to 350Β°F (175Β°C). Grab an 8” or 9” springform pan, line it with parchment paper, and grease it with a bit of oil. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.

4. Using a mixer, beat the room temperature butter for about a minute, then add the sugar and keep beating until it’s light and fluffy β€” this should take around 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and buttermilk, then gradually add the dry ingredients, mixing just until combined to avoid overmixing.

5. Now, let’s assemble the delicious cake! Spread 2/3 of the batter into the prepared pan, layer with half of the chopped apples, and then spread the remaining batter over the apples. Top it off with the rest of the apples. Finally, sprinkle the streusel crumb evenly over everything.

6. Bake in your preheated oven for 55-65 minutes. If the top browns too quickly, loosely cover it with foil. The cake is done when a toothpick inserted in the center comes out clean. Allow it to cool completely before glazing.

7. While the cake is cooling, make the Apple Cider Cinnamon Glaze! Beat together the cream cheese, butter, powdered sugar, cinnamon, and 1 tbsp apple cider until you achieve a smooth consistency. If you want a thinner drizzle, add more apple cider; if it’s too runny, just add a bit more powdered sugar.

8. Once the cake is cool, drizzle the glaze over it, slice it up, and enjoy every bite!
