📋 Ingredients
- 1 pound lean ground beef
- 1 can (15 oz) pinto beans, drained
- 1 can (8 oz) tomato sauce
- 1 can (10 oz) diced tomatoes with green chilies
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 1 package (8 oz) corn muffin mix
- 1 cup milk
- 1 egg
📝 Instructions
1. Preheat the oven to 375°F (190°C).
2. In a skillet, brown the ground beef and onion over medium heat until the beef is cooked through. Drain any excess fat.
3. Stir in the pinto beans, tomato sauce, and diced tomatoes.
4. Pour the mixture into a greased baking dish.
5. In a bowl, combine the corn muffin mix, milk, and egg until smooth.
6. Pour the muffin mixture over the beef mixture in the baking dish.
7. Sprinkle the shredded cheddar cheese on top.
8. Bake for 25-30 minutes or until the muffin topping is golden brown.
9. Let it cool for a few minutes before serving. Enjoy!
