🛒 Ingredients:
3 ¾ cups granulated sugar
1 ¼ cups light corn syrup
1 cup water
1 tsp red gel food coloring (optional for that fiery look)
1 tsp cinnamon oil (NOT extract – oil gives the bold flavor)
Powdered sugar, for dusting
Candy thermometer

Prep your pan:
Line a large baking sheet with foil and spray lightly with non-stick spray. Set aside.
Boil the candy mixture:
In a large saucepan, combine sugar, corn syrup, and water. Stir constantly over medium heat until the sugar dissolves.
Cook to hard crack stage:
Stop stirring and bring the mixture to a boil. Insert a candy thermometer and cook until it reaches 300°F (hard crack stage).
Color and flavor:
Once it hits 300°F, remove from heat immediately. Quickly stir in food coloring and cinnamon oil—be careful, the cinnamon vapor is strong! Pour into prepared pan.
Cool and crack:
Let the candy cool completely (about 1 hour). Once hardened, crack into pieces using a knife or by tapping with a spoon.
Dust with powdered sugar:
Toss the pieces in powdered sugar to keep them from sticking. Store in an airtight container.
