🇫🇷 Navarin d’Agneau (Lamb Stew)
Hearty and rich—this spring lamb stew is brimming with carrots, potatoes, and thyme.
Ingredients:
• 1 pound lamb, diced
• 2 carrots, chopped
• 2 potatoes, cubed
• 1 onion, diced
• 1 tbsp tomato paste
• 1 tbsp flour
• 1 tbsp thyme
• 2 cups stock
• Olive oil, salt, pepper
Instructions:
1. Brown lamb in olive oil. Remove and set aside.
2. In the same pot, sauté onion and carrots.
3. Stir in flour and tomato paste.
4. Add lamb, potatoes, thyme, and stock.
5. Simmer for 1 hour or until tender. Adjust seasoning and serve.
