Spiced Beef and Potato Roti Wraps
Ingredients
For the Filling
1 lb ground beef
2 medium potatoes (peeled and diced)
1 onion (chopped)
4 cloves garlic (minced)
1 tablespoon fresh ginger (grated)
2 tablespoons curry powder
1 teaspoon allspice
1-2 Scotch bonnet peppers (whole, adjust for heat)
Salt and pepper (to taste)
2 tablespoons vegetable oil
1 cup beef broth
For the Roti
2 cups all-purpose flour
1 teaspoon salt
1/2 cup water (adjust as needed)
2 tablespoons vegetable oil (for dough)
Instructions
1. Prepare the Roti
Mix Dough: In a bowl, combine flour and salt. Gradually add water and oil, mixing until a soft dough forms.
Knead: Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
2. Cook the Filling
Heat Oil: In a large skillet, heat vegetable oil over medium heat.
Cook Onions: Add chopped onions and sauté until translucent, about 5 minutes.
Add Garlic and Ginger: Stir in minced garlic and grated ginger, cooking for another minute.
Add Ground Beef: Add ground beef and cook until browned.
Add Potatoes and Spices: Stir in diced potatoes, curry powder, allspice, and whole Scotch bonnet peppers. Cook for a few minutes.
Add Broth: Pour in beef broth, cover, and simmer for about 20 minutes, or until potatoes are tender. Season with salt and pepper.
3. Cook the Roti
Divide Dough: Divide the rested dough into small balls (about the size of a golf ball).
Roll Out: On a floured surface, roll each ball into a thin circle.
Cook Roti: Heat a skillet over medium heat. Cook each roti for about 1-2 minutes on each side until lightly browned and cooked through. Keep warm.
4. Assemble the Wraps
Fill Roti: Place a generous portion of the beef and potato filling in the center of each roti.
Wrap: Fold the sides over the filling and roll it up tightly.
