The Best Strawberry Cake Ever
Ingredients:
For the cake:
1 box white cake mix
1 package (3 oz) strawberry flavored gelatin
1 cup mashed strawberries (with juice)
3/4 cup vegetable oil
4 large eggs
1/2 cup water
For the frosting:
1/4 cup butter, softened
1 package (8 oz) cream cheese, softened
3 cups powdered sugar
3/4 cup mashed strawberries (drained)
Directions:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, combine cake mix and gelatin. Add mashed strawberries, vegetable oil, eggs, and water. Beat on medium speed until smooth and thoroughly combined.
Pour batter evenly into prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Allow cakes to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
For the frosting, beat together butter and cream cheese until light and fluffy. Gradually add powdered sugar and beat until smooth. Fold in drained mashed strawberries.
