No-Bake Cherry Almond Cream Pie Minis π
Ingredients:
- 1 cup almond flour
- 2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon almond extract
- 1 cup cherry pie filling (store-bought or homemade)
- Sliced almonds for topping
Instructions:
1. In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup until it forms a crumbly dough.
2. Press this mixture into the bottom of mini tart pans to form the crust. Make sure itβs even.
3. In another bowl, beat the softened cream cheese and powdered sugar together until smooth.
4. Add in the almond extract and mix until fully combined.
5. Spoon the cream cheese mixture over the crust in each tart pan, filling them evenly.
6. Top each mini pie with cherry pie filling, spreading it out evenly.
7. Sprinkle sliced almonds on top for extra crunch.
8. Refrigerate the mini pies for at least 2 hours to set.
9. Once set, carefully remove from the tart pans and serve chilled.
Notes:
- Feel free to use fresh cherries if they are in season for a fresher taste.
- You can replace the cherry filling with any fruit of your choice for variety.
