Ingredients:
- 2 medium zucchinis
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, diced
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella, plus extra for topping
- 1/4 cup grated Parmesan
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: Fresh basil or parsley, chopped for garnish
Directions:
1. Preheat your oven to 375°F (190°C) and grease a baking dish.
2. Take those zucchinis and slice them in half lengthwise, scooping out the centers to create little boats.
3. Drizzle olive oil over the zucchini halves and season them with salt and pepper to taste.
4. In a skillet, sauté the minced garlic in olive oil. Toss in the diced mushrooms and cook until they're nice and soft.
5. Add the chopped spinach to the mushrooms and cook until wilted.
6. In a big bowl, mix the sautéed veggies with ricotta, mozzarella, Parmesan, salt, and pepper until well combined.
7. Stuff those zucchini halves with your cheesy veggie mixture and sprinkle some extra mozzarella on top for that ooey-gooey finish.
8. Bake in the oven for 25–30 minutes, or until the zucchinis are tender and beautifully golden.
9. Once they’re out, give them a garnish of chopped fresh herbs and serve those beauties warm!
