🇮🇹 Castagnaccio (Chestnut Cake)
A rustic, earthy cake made from chestnut flour, sweet raisins, and crunchy pine nuts – a Tuscan classic!
Ingredients:
• 250 g chestnut flour
• 350 ml water
• 40 g raisins
• 30 g pine nuts
• 1 sprig rosemary
• 2 tbsp olive oil
• Pinch of salt
Instructions:
1️⃣ Soak raisins in warm water. Mix flour, salt, and water into a smooth batter.
2️⃣ Add half the raisins and pine nuts.
3️⃣ Pour into oiled pan and top with remaining raisins, pine nuts, and rosemary.
4️⃣ Drizzle with olive oil and bake at 180°C for 30 mins.
