🍯 Honey Mustard Chicken with Roasted Asparagus and Cheese
Ingredients:
4 boneless skinless chicken breasts
½ cup honey
¼ cup Dijon mustard
2 tbsp olive oil
2 cloves garlic, minced
Salt and pepper, to taste
1 bunch fresh asparagus, trimmed
1 cup shredded mozzarella or provolone cheese
1 tbsp chopped fresh parsley (optional)
Instructions:
1️⃣ Preheat Oven:
Preheat oven to 400°F (200°C).
Grease a baking dish lightly with oil or cooking spray.
2️⃣ Make Honey Mustard Sauce:
In a bowl, whisk together honey, Dijon mustard, olive oil, garlic, salt, and pepper.
3️⃣ Prepare Chicken:
Place chicken breasts in the baking dish.
Pour half of the honey mustard sauce over the chicken, reserving the rest.
4️⃣ Bake Chicken:
Bake for 20 minutes.
5️⃣ Add Asparagus & Cheese:
Remove dish from oven.
Arrange asparagus around the chicken.
Drizzle with remaining sauce.
Top each chicken breast with shredded cheese.
6️⃣ Final Bake:
Return to oven and bake for 10–12 more minutes, until chicken is cooked through and cheese is melted.
