Easy One-Pan Salmon with Potatoes and Zucchini 🥔🐟🥒

Ingredients:
- 4 salmon fillets (about 150 g each)
- 2 cups baby potatoes, halved
- 2 zucchinis, sliced
- 3 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)

Directions:
1. Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper.
2. In a bowl, toss the baby potatoes with 1 tablespoon olive oil, half the garlic, thyme, oregano, paprika, salt, and pepper. Spread the potatoes on the baking sheet and roast for 15 minutes.
3. While the potatoes are roasting, toss the zucchini slices with 1 tablespoon olive oil, a pinch of salt, and pepper.
4. Remove the baking sheet from the oven, push the potatoes to one side, and place the zucchini and salmon fillets on the other side.
5. Drizzle the salmon with the remaining olive oil, sprinkle with garlic, salt, pepper, and paprika.
6. Roast everything for another 12-15 minutes, or until the salmon is flaky and cooked through.
7. Garnish with fresh parsley and serve with lemon wedges for a zesty touch.
