🥩🧀 Keto Philly Cheesesteak Roll Ups
Ingredients:
1 lb (450g) thinly sliced beef (ribeye or sirloin works best)
1 tbsp olive oil or butter
1 green bell pepper, thinly sliced
1 small onion, thinly sliced
1/2 cup mushrooms, sliced (optional)
6–8 slices provolone cheese
1/2 tsp garlic powder
Salt & pepper to taste
Toothpicks or skewers (for rolling)
Directions:
Heat olive oil in a skillet over medium heat. Sauté bell pepper, onion, and mushrooms (if using) until soft. Remove from skillet and set aside.
In the same skillet, quickly sear the beef slices—just 1–2 minutes per side. Season with garlic powder, salt, and pepper.
Lay out the cooked beef slices. Top each one with sautéed veggies and half a slice of provolone.
Roll up each slice tightly and secure with a toothpick.
Place roll-ups back in the skillet or on a baking tray and let the cheese melt over low heat or under the broiler for 2–3 minutes.
Remove toothpicks before serving.
