Juicy Bacon-Wrapped Meatloaf with Swiss Cheese & Mushrooms
Ingredients:
1 ½ lbs ground beef (80/20)
½ lb ground pork
1 cup breadcrumbs
1/2 cup milk
1 egg
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper, to taste
1 cup Swiss cheese, shredded
1 cup mushrooms, finely chopped and sautéed
10–12 slices of bacon
2 tablespoons ketchup (optional for glaze)
Fresh parsley for garnish
Directions:
Preheat your oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top.
In a skillet, sauté chopped mushrooms in a little oil over medium heat until softened and any moisture evaporates. Let cool.
In a large bowl, soak breadcrumbs in milk for 5 minutes. Add ground beef, ground pork, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined—do not overwork.
Gently fold in the sautéed mushrooms and shredded Swiss cheese.
Form the mixture into a loaf shape and place it on the wire rack.
Lay the bacon strips over the top of the meatloaf, tucking the ends underneath to wrap it fully.
Optional: Brush top with ketchup for a sweet glaze.
Bake for 55–65 minutes, or until internal temperature reaches 160°F (71°C).
Let rest 10 minutes before slicing. Garnish with chopped parsley and serve hot.
