Graham Cracker Toffee Bars
Ingredients:
12 whole graham cracker sheets
1 cup unsalted butter
1 cup brown sugar, packed
1/2 teaspoon vanilla extract
1 1/2 cups chopped pecans
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350°F (175°C). Line a 9x13 inch baking sheet with parchment paper or foil and spray lightly with non-stick spray.
Arrange graham crackers in a single layer, covering the bottom of the pan.
In a saucepan, melt the butter over medium heat. Stir in brown sugar and bring to a gentle boil. Boil for 2 minutes, stirring constantly.
Remove from heat and stir in vanilla. Pour the mixture evenly over the graham crackers and spread with a spatula.
Sprinkle chopped pecans evenly over the top and bake for 8-10 minutes, or until bubbly and golden.
Remove from oven and immediately sprinkle chocolate chips over the top. Let sit for 2 minutes to melt slightly, then gently press them into the toffee.
Allow to cool completely, then refrigerate for 30 minutes before slicing into bars.
