Buttermilk-Pecan Southern Holiday Loaf

Ingredients:
1 cup unsalted butter, melted
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup buttermilk (or 1 cup milk + 1 teaspoon lemon juice or vinegar)
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped pecans
Cinnamon or nutmeg (optional, for a festive touch)

Directions:

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

Mix the Wet Ingredients
In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Beat in the eggs one at a time, followed by the vanilla extract. Stir in the buttermilk to create a silky batter base.

Combine the Dry Ingredients
In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add the dry mixture into the wet ingredients, stirring gently. Avoid overmixing to maintain a tender crumb.

Add Pecans
Fold in the chopped pecans, making sure they're evenly distributed throughout the batter. Sprinkle with cinnamon or nutmeg if desired.

Bake
Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
