Sweet Chili Chicken with Broccoli Pasta
Zesty Sweet Chili Chicken Penne with Crisp Broccoli Florets
Ingredients:
8 oz penne pasta (regular or whole wheat)
1 tbsp olive oil
1 lb boneless, skinless chicken breast, cut into bite-sized strips
Salt and black pepper to taste
1/2 tsp garlic powder
2 cups broccoli florets
1/2 cup sweet chili sauce
1 tbsp low-sodium soy sauce
1/2 tsp crushed red pepper flakes (optional)
2 green onions, sliced
1 tbsp sesame seeds (optional for garnish)
Directions:
Bring a large pot of water to a boil and cook penne pasta according to package instructions. During the last 3 minutes, add broccoli florets to the pot. Drain and set aside.
While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
Season chicken pieces with salt, pepper, and garlic powder. Add to the skillet and cook until golden and fully cooked, about 6-7 minutes.
Reduce heat to medium. Add sweet chili sauce, soy sauce, and crushed red pepper flakes (if using). Stir to coat the chicken evenly and let simmer for 2-3 minutes.
Add the drained pasta and broccoli to the skillet and toss everything together until well coated and heated through.
Serve warm, topped with sliced green onions and sesame seeds if desired.
