Strawberry Cream Cheese Chill Pie

Ingredients
For the Filling:
• 8 oz (225g) cream cheese, softened
• 1 cup powdered sugar
• 1 tsp vanilla extract
• 1 cup whipped topping (or whipped cream)
For the Crust:
• 1 1/2 cups graham cracker crumbs
• 1/3 cup granulated sugar
• 6 tbsp unsalted butter, melted
For the Strawberry Topping:
• 5 cups fresh strawberries (divided)
• 1/2 cup granulated sugar
• 1 1/2 tbsp cornstarch
• 1/2 cup water
• 1 tsp lemon juice (optional)

Instructions
1. Prepare the Crust:
• In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
• Press the mixture firmly into a 9-inch pie dish.
• Chill in the refrigerator while preparing the filling.
2. Make the Filling:
• In a large bowl, beat cream cheese until smooth.
• Add powdered sugar and vanilla, and beat until fluffy.
• Fold in whipped topping gently until well combined.
• Spread the filling evenly over the chilled crust.
3. Make the Strawberry Glaze:
• Puree 1 1/2 cups of the strawberries in a blender or food processor.
• In a small saucepan, combine strawberry puree, sugar, cornstarch, water, and lemon juice.
• Cook over medium heat, stirring constantly, until thickened and glossy (about 5–8 minutes).
• Let it cool to room temperature.
4. Assemble the Pie:
• Slice the remaining strawberries and place them on top of the cream cheese layer.
• Pour the cooled strawberry glaze over the berries.
• Chill the pie for at least 4 hours (or overnight) until set.
