Fresh Rhubarb Pie
Here is a simple recipe to help you enjoy the tangy sweet flavor of fresh rhubarb in a lovely homemade pie. It feels warm, comforting, and even a little bit nostalgic.
Ingredients:
1. 4 cups fresh rhubarb chopped into bite sized pieces
2. 1 cup granulated sugar
3. 1 cup all purpose flour
4. pinch of salt
5. 1 teaspoon vanilla extract
6. two ready made pie crusts one for the bottom and one for the top
7. one tablespoon unsalted butter cut into small pieces
Instructions:
1. Preheat the oven to 400°F so it’s nice and hot when you’re ready to bake.
2. In a large bowl combine chopped rhubarb, sugar, flour, salt, and vanilla. Gently toss until every piece is coated and the mixture starts to look sticky.
3. Unroll one pie crust into a nine inch pie dish and press it gently against the bottom and sides.
4. Spoon the rhubarb filling into the crust and dot the top with the little pieces of butter.
5. Lay the second crust on top, trim any excess, and pinch the edges together. Cut a few small vents so steam can escape.
6. Place the pie on a baking sheet to catch any drips. Bake at 400°F for 15 minutes, then lower the oven to 350°F and bake for about 40 more minutes until the crust is golden and the filling is bubbling.
7. Let the pie cool on a wire rack for at least two hours so the filling can set. This patience is worth it for nice clean slices.
