Marry Me Halloumi
This dish is a vegetarian take on the internet-famous “Marry Me Chicken,” known for its irresistibly creamy sauce. With fried halloumi as the centerpiece, surrounded by a garlicky tomato cream sauce and a touch of parmesan, it’s rich, satisfying, and ready in just 20 minutes. It’s an elegant yet easy dinner—perfect for both weeknights and special meals.
225g halloumi cheese, sliced
Salt and black pepper
1 onion, diced
1 garlic clove, minced
150g cherry tomatoes
240ml vegetable stock
120ml light cream
1/2 tsp oregano
1/2 tsp thyme
1 tsp smoked paprika
2 tbsp grated vegetarian parmesan
1 handful spinach
Directions:
1 Season and pan-fry halloumi until golden, then set aside.
2 Sauté onion and garlic in the same pan.
3 Add tomatoes and cook until soft.
4 Add stock and reduce slightly.
5 Stir in cream and spices, simmer until thick.
6 Add parmesan and stir through.
7 Wilt in spinach.
8 Return halloumi to skillet, simmer 2 mins.
9 Remove from heat and serve hot.
