2 tbsp water
ยผ cup heavy cream
1 tbsp butter
Pinch of salt
ยฝ tsp vanilla extract

1. Make the Crust:
Preheat oven to 325ยฐF (163ยฐC).
Combine graham cracker crumbs, sugar, cinnamon, and melted butter.
Press firmly into the bottom of a 9-inch springform pan.
Bake for 8โ10 minutes. Let cool.
2. Prepare the Filling:
Beat the cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each.
Stir in vanilla, sour cream, and flour.
Pour over the crust and smooth the top.
Bake for 55โ65 minutes until the center is just slightly jiggly.
Turn off oven, crack door, and let cheesecake cool inside for 1 hour. Then refrigerate at least 4 hours or overnight.
3. Make the Apple Topping:
In a skillet, melt butter over medium heat.
Add diced apples, brown sugar, cinnamon, nutmeg, and salt.
Cook for 8โ10 minutes, stirring occasionally, until tender but not mushy. Cool slightly.
4. Make the Caramel Sauce:
In a small saucepan, heat sugar and water over medium-high heat until it turns amber.
Remove from heat and whisk in cream, butter, salt, and vanilla.
Let cool before drizzling.
5. Assemble the Cheesecake:
Spoon the apple topping over the chilled cheesecake.
Drizzle generously with homemade caramel sauce.
