Shrimp Fettuccine with Creamy Tomato Alfredo Sauce
Ingredients:
12 oz fettuccine pasta

1 lb shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

½ cup tomato sauce (or crushed tomatoes)

½ cup freshly grated Parmesan cheese

2 tbsp butter

1 tsp Italian seasoning

Salt and pepper, to taste

¼ cup chopped fresh parsley or chives

½ cup diced fresh tomatoes

Fresh basil leaves, for garnish

Optional: pinch of red pepper flakes for a little heat

Instructions:
1. Cook the Pasta:
Bring a large pot of salted water to a boil.

Cook the fettuccine according to package instructions until al dente.

Drain, reserving about ½ cup of pasta water, and set aside.

2. Cook the Shrimp:
While the pasta cooks, heat olive oil in a large skillet over medium-high heat.

Season the shrimp lightly with salt, pepper, and a pinch of Italian seasoning.

Add the shrimp to the skillet and cook for 1–2 minutes per side, until pink and cooked through.

Remove shrimp and set aside.

3. Make the Sauce:
In the same skillet, add butter and minced garlic; cook for 30 seconds until fragrant.

Stir in the heavy cream and tomato sauce.

Add Parmesan cheese and Italian seasoning, stirring until the cheese melts and the sauce thickens slightly (about 3–4 minutes).

Season with salt, pepper, and red pepper flakes if using.

4. Combine:
Add the drained pasta and shrimp back into the skillet with the sauce.

Toss gently to coat everything evenly. Add a splash of reserved pasta water if the sauce is too thick.

Stir in diced fresh tomatoes and chopped parsley or chives.

5. Serve:
Plate the pasta onto a white plate, letting the creamy sauce cling naturally and pool a little.

Garnish with fresh basil leaves and an extra sprinkle of Parmesan, if desired.

Serve warm and enjoy!

Tips:
You can swap shrimp for scallops, chicken, or even keep it vegetarian with sautéed mushrooms.

For an even creamier version, stir in a tablespoon of cream cheese into the sauce.
