Instructions
1. Preheat the Oven & Prep the Potatoes
Preheat oven to 400Β°F (200Β°C).
On a large baking sheet, toss the potato pieces with olive oil, minced garlic, oregano, salt, and pepper. Spread them out in a single layer.
2. Prepare the Chicken
In a bowl, toss the chicken breasts or thighs with olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
3. Roast the Potatoes
Roast the potatoes for 15 minutes.
4. Add the Chicken
Remove the baking sheet from the oven and arrange the seasoned chicken among the partially cooked potatoes.
5. Prepare the Garlic Butter Sauce
While the chicken and potatoes roast, whisk together the melted butter, minced garlic, chopped parsley, lemon zest, red pepper flakes (if using), and salt in a small bowl.
