Banana Bread Cookies
Ingredients:
1 ripe banana, mashed
½ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
½ cup chopped pecans (optional)
Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, beat butter, brown sugar, and granulated sugar until creamy.
Add the mashed banana, egg, and vanilla extract, mixing until combined.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add to the wet ingredients.
Fold in the chopped pecans if using.
Drop spoonfuls of dough onto the prepared baking sheet and gently press with a fork.
Bake for 10-12 minutes or until edges are golden brown.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
