Tuscan Herb Salmon with Creamy Spinach Ravioli
Savory Tuscan Salmon with Spinach-Filled Ravioli
Ingredients:
4 salmon fillets (6 oz each)
1 lb spinach ravioli (store-bought or homemade)
2 tbsp olive oil
3 tbsp unsalted butter
3 garlic cloves, minced
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
1 cup fresh spinach, chopped
1/4 cup sun-dried tomatoes, chopped
1 tsp dried Italian herbs
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
Directions:
Cook the spinach ravioli according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Season salmon fillets with salt, pepper, and Italian herbs. Sear the salmon for 4-5 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Stir in the heavy cream and grated Parmesan cheese, cooking for 2-3 minutes until the sauce thickens slightly.
Add the sun-dried tomatoes, chopped spinach, and red pepper flakes (if using) to the sauce. Cook for 2 minutes until the spinach is wilted.
Toss the cooked ravioli in the creamy sauce until well coated.
Serve the creamy spinach ravioli on a plate, topped with the seared salmon fillets. Garnish with fresh parsley and additional Parmesan cheese if desired.
