250g penne pasta (or short pasta)
1 tsp olive oil
1 red onion, chopped
2 garlic cloves, chopped
2 tsp smoked paprika
1 tsp oregano
225g halloumi, cubed
200g chorizo, sliced
500ml passata (or chopped tomatoes)
2 tsp sugar
3 tbsp double cream
50g Grana Padano (or Parmesan), grated
2 tbsp parsley, chopped

Directions:
1. Heat olive oil in a pan, sauté onion and garlic for 3-4 minutes. Cook pasta until al dente, drain, and reserve 1 cup of pasta water.
2. Add smoked paprika and oregano, cook for 1 minute.
3. Add halloumi and chorizo, fry until halloumi is golden.
4. Stir in passata, sugar, and cream. Simmer for 10 minutes.
5. Add pasta and reserved water, stir well. Top with parsley and grated cheese before serving.
